Now, this Lady Locks recipe makes about 100.  And, these delicious cookies do take some time and patients to make. But, these cookies are definitely worth it in the end! Also, your family and friends will love these. With that in mind, make sure you make enough for them. In other words, that means let’s get cooking. 

Prep time: 1 day and 4 hours: (dough needs refrigerated overnight)
Oven temp: 350°
Make about: 100

 2 cups Shortening

 2 Tablespoons Sugar

 2 Egg Yolks

 3 cups Flour

 1¼ Cups Water

Now, let’s get started with these works of art!

First, in a large bowl, mix together Sugar and Flour.
2 Tablespoons Sugar
3 Cups Flour

Next, you are½ Cup Shortening going to want to cut in a ½ cup of your Shortening (I chill my shortening for best results.).
Then add the Egg Yolks and Water. Mix like pie dough. 2 Egg Yolks
1¼ Cups Water

Now wrap your dough in some plastic wrap and put in the refrigerator for an hour. Next Roll out dough using a little flour.

Then, spread some of your Shortening ½ Cup Shortening
Refrigerate 1 Hour
½ Cup Shortening
Refrigerate 1 Hour
½ Cup Shortening
Refrigerate 1 Hour

on dough and fold dough up in thirds. After that, wrap back up and refrigerate again for 1 hour.
Then, do that process two more times, until you have used the remaining Shortening.(total shortening 1½ Cups)

Refrigerate Overnight

 

Now the fun part.

Afterwards, roll dough out ¼ at a time. First, use a little flour and roll out so that your rectangle will make 25 strips.
Next, wind each strip over a clothespin, overlap some and pat a little so they will stay together. In the meantime, place on cookie sheets. Bake at 350° for 10 minutes. Above all, bake carefully just till lightly brown on bottom. Then, remove from clothespin while warm. After that, cool and fill.  Finally, dust with powdered sugar.

FILLING FOR LADY LOCKS:

 5 Tablespoons Flour
 1 Cup Milk
 ½ Cup Butter
 1 Teaspoon Vanilla
 1 Cup Confectioners’ Sugar

Let’s get mixing:

First, in a small saucepan, whisk Milk and Flour at medium heat, continuously stir or will burn. 1 Cup Milk
5 Tablespoons Flour
Again, add milk to flour real slow and make a smooth paste. Also, be careful to not let it burn. Then, let cool completely in refrigerator.
Next, in a blender, cream Butter, Vanilla, and Confectioners’ Sugar. ½ Cup Butter
1 Teaspoon Vanilla
1 Cup Confectioners’ Sugar
After that, add to cooked mixture and beat well. Finally, fill Lady Locks with cake decorator.
